Slice the pork belly into cubes.

Start off by slicing the pork belly into cubes of roughly 2.5 cm. Don’t worry if it isn’t perfect; the important thing is to make sure the cubes are approximately the same size for consistency in taste and texture. Set aside cubes before continuing with the next steps.

Marinate the pork with rice wine and dark soy sauce for at least 30 minutes.

In a bowl, mix the pork cubes with Shaoxing (Chinese rice wine) and dark soy sauce. The ratio of rice wine to dark soy sauce should be 1:1. Add in some sugar to balance out the flavors, and then leave the pork to marinate for at least 30 minutes.

Heat up wok and stir-fry theCube the pork in oil until it turns golden in color & add light soy sauce + sugar (according to your taste).

Heat up a wok or pan on the stove over medium-high heat and then add the oil. Once the oil is hot, add in the marinated pork cubes and stir-fry until they turn golden brown. Season with some light soy sauce, according to your taste. Finally, add a bit of sugar to balance out any saltiness. Stir-frying time should be short--around 2-3 minutes--as we don't want the pork to become overcooked.

Add star anise and hard boiled eggs to the mixture together with some brown bean paste or shaoxing wine (optional). Simmer for few minutes before serving over hot cooked jasmine rice!

After the pork cubes have been stir-fried, add in star anise, hard boiled eggs and either brown bean paste or a splash of shaoxing wine (optional). Gently break up the eggs to better disperse them in the dish. You can also add extra salt and sugar to taste. Mix everything together thoroughly before turning down the heat and simmering for three to four minutes, stirring occasionally. Finally, serve over steamed jasmine rice for a comforting meal that will fill your house with alluring aromas!
