Gather Your Ingredients.

Before you get started, make sure to gather all of your ingredients. You’ll need 2 tablespoons red curry paste, 1/2 can coconut milk, 1/4 cup crunchy peanut butter, 1/4 cup brown sugar, 1/4 cup fish sauce, 2 cloves garlic (minced), 1 tablespoon tamarind paste, and 2 teaspoons ground coriander. Additionally you’ll need vegetables of your choice!

Prepare the Vegetables and Meat.

Begin by preparing your vegetables and any meat such as chicken, beef, or pork you plan on adding to the curry. Dice the vegetables into cubes and cut up the meat into small pieces if necessary. Heat a few tablespoons of oil in a large skillet and cook the vegetables first until lightly browned. Once done, add your desired protein and sauté for a few more minutes or until cooked through.

Toast and Grind the Spices.

To make the Massaman Curry flavorful, you’ll need to toast and grind your spices. Gather together whole coriander seed, cumin seed, cardamom pods, cinnamon sticks, and cloves in a dry frying pan. Toast the spices over medium-low heat for a few minutes, stirring them intermittently to ensure they don't burn. Once toasted, remove from pan and grind using a mortar and pestle or spice grinder until completely broken down into fine powder.

Start Cooking the Curry Paste and Coconut Milk

Once your spices are toasted and ground, it's time to get cooking! Heat a large pot over medium heat and add oil. When hot, stir in the curry paste, stirring until fragrant. This will only take a few minutes; be sure not to burn it. Next, add in the coconut milk and bring mixture to a boil before reducing to a simmer. Cook for 15 minutes or until creamy and lightly reduced. Finally, stir in sea salt and sugar before turning off heat.

Assemble the Massaman Curry Dish.

Serving your Massaman curry dish is simple. Place cooked jasmine rice into a bowl and top with chicken and vegetables. Pour in the thick, creamy curry sauce and garnish with cilantro leaves and chopped peanuts. Serve with lime wedges for squeezing over each serving. Enjoy!
