You’ll need 2 tablespoons red curry paste, 1/2 can coconut milk, 1/4 cup crunchy peanut butter, 1/4 cup brown sugar, 1/4 cup fish sauce, 2 cloves garlic (minced), 1 tablespoon tamarind paste, and 2 teaspoons ground coriander. Additionally you’ll need vegetables of your choice!

Prepare the Vegetables and Meat.

Begin by preparing your vegetables and any meat such as chicken, beef, or pork you plan on adding to the curry. Dice the vegetables into cubes and cut up the meat into small pieces if necessary. Heat a few tablespoons of oil in a large skillet and cook the vegetables first until lightly browned. Once done, add your desired protein and sauté for a few more minutes or until cooked through.

Toast and Grind the Spices.

To make the Massaman Curry flavorful, you’ll need to toast and grind your spices. Gather together whole coriander seed, cumin seed, cardamom pods, cinnamon sticks, and cloves in a dry frying pan.
