The first step to making the perfect egg curry is to gather all the ingredients. You will need eggs, onion, garlic, curry powder, ginger paste, tomato puree, yogurt, garam masala powder and salt. Begin by boiling the eggs and setting aside. While the eggs are cooking, heat oil in a large saucepan over medium-high heat. Add onions and garlic and cook for several minutes until soft and lightly browned. Then add curry powder, ginger paste, tomato puree and yogurt to the pan, stirring to combine with the onions and garlic. Lower the heat to medium-low and simmer for about 10 minutes. Once done, add the boiled eggs to the Curry Sauce and stir gently to coat them evenly with the sauce.
