Gather the Ingredients.

The first step to making the perfect egg curry is to gather all the ingredients. You will need eggs, onion, garlic, curry powder, ginger paste, tomato puree, yogurt, garam masala powder and salt. Make sure you have all the ingredients ready before getting started as this will make preparing the egg curry much easier.

Cook the Eggs.

Begin by boiling the eggs and setting aside. While the eggs are cooking, heat oil in a large saucepan over medium-high heat. Add onions and garlic and cook for several minutes until soft and lightly browned. Then add curry powder, ginger paste, tomato puree and yogurt to the pan, stirring to combine with the onions and garlic. Lower the heat to medium-low and simmer for about 10 minutes. Once done, add the boiled eggs to the Curry Sauce and stir gently to coat them evenly with the sauce.

Prepare the Spices and Add Flavor to the Curry Paste.

Once the Curry Sauce has been simmering for 10 minutes, it's time to add the spices and aromatic ingredients that will give the curry its unique flavor. Begin by adding cumin powder, coriander powder, garam masala powder and hot chili powder. Use a spoon to mix these ingredients into the curry paste, and then taste to adjust if necessary. Allow the curry to simmer for an additional 10 minutes until it reaches your desired consistency.

Sauté the Onions, Garlic and Ginger.

Heat some oil in a large pan, and when it is hot, add the minced onions. Sauté for about 3 minutes until golden and then add the minced garlic and ginger. Cook for another 2 minutes until fragrant and then add the curry paste. Cook for 7-8 minutes stirring every few minutes, until the curry sauce starts to thicken and darken.

Finally, Put Everything Together to Make the Perfect Egg Curry.

Once the curry sauce has reduced and darkened, add in the eggs, stirring gently to coat them with the sauce. Cook for a few minutes until they are done. Serve your egg curry with steamed basmati rice or crusty bread. Enjoy!
