Vegan Aborrajados are a sweet and delicious treat that can be made with vegan-friendly ingredients. This traditional Latin American recipe takes just minutes to make and offers an irresistible combination of flavors and textures. Get ready to enjoy this delightful dish!

Gather Your Ingredients.

Before you begin, make sure to have all the necessary ingredients on hand. For this vegan Aborrajados recipe, you will need plant-based butter, unbleached all-purpose flour, dried pineapple pieces, raisins or other small dried fruit of your choice, ground cinnamon, and sugar (optional). Alternatively, instead of butter, you can try using coconut oil or margarine.

Prepare the Plantain Batter.

In a medium-sized bowl, use a fork or whisk to combine the plant-based butter with the flour until it forms a crumbly texture. Next, add the sugar, cinnamon and any other dried fruit you would like to include. Finally, mix in the dried pineapple pieces until everything is well combined. Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes.

Filling the Aborrajados.

Once the dough has had time to chill, it’s time to assemble your Aborrajados! Spread the dough onto a lightly floured surface and use a circle cookie cutter or a wine glass to cut out even-sized circles. Place one teaspoon of jam in the middle of each circle, fold it over and press along the edges with the tines of a fork. Arrange the filled pastries on a parchment lined baking sheet and bake at 350 degrees Farenheit for 15 minutes or until golden brown.

Fry in Hot Oil.

Once all of the Aborrajados have been baked, you can now fry them in hot oil to get an extra crisp texture. Heat 3 inches of vegetable oil in a large sectioned pan over medium-high heat. When the oil is frying temperature, carefully place 2 or 3 Aborrajados into the hot oil and let them cook for about 1 minute on each side, or until golden-brown. Remove from the heat and place on a paper towel lined plate to soak up any excess oil

Serve and Enjoy!

Once the Aborrajados have finished cooking in oil, serve them warm and enjoy with a mug of freshly brewed coffee or hot cocoa! They are best when served immediately, but any leftover Aborrajados can be stored in the fridge and reheated in the oven at a later time. Enjoy your vegan Aborrajados and savor every delicious bite!
